Sourdough Discard Scallion Pancakes

These scallion pancakes are a super easy and tasty. You don’t need any fancy ingredients either—just an egg, water, flour, oil, salt, baking powder. and scallions. And of course, if you got some sourdough discard sitting in the fridge, with this receipt you can use the letfovers. These pancakes are great as a snack, side dish, or quick lunch. I think they taste best dipped in soy sauce.

1 cup sourdough discard (unfed, from fridge is fine)
1 egg
1/4 cup water
1/2 cup all-purpose flour
1/2 tsp salt
1/4tsp baking powder
1/2 tsp sesame oil (optional, for flavor)
1 cup chopped scallions (green parts only)
Vegetable oil for frying

Directions

Step 1:
First mix the sourdough discard, egg, water and sesame oil together. Then add the flour, salt and baking powder. Mix until smooth. Finally fold in the chopped scallions.

Heat 1–2 tablespoons of vegetable oil in a cast iron skillet over medium heat.

Step 3:
Pour 1/4 of the batter (about 1/2 cup) into the hot pan and spread it out to form a round pancake. Cook for about 3-4 minutes, until golden brown and bubbles appear on the surface. Flip the pancake and cook for another 2-3 minutes on the other side.

Step 4:
Repeat the same process with the remaining batter, adding more oil if necessary. Remove the cooked pancakes to a plate lined with paper towels.

Cut the pancakes into slices and serve hot with soy sauce, chili chips or dipping sauce.
