Sourdough Discard Pumpkin Bread

Pumpkin bread always takes me back to my childhood when my mother would bake pumpkin bread for us. That is why this receipt is quite significant to me.

Since I love baking with sourdough discard, I decided to modify my mother’s recipe a bit so that anyone who bakes with sourdough discard could make these delicious pumpkin breads too.

I first baked this bread years ago and after many experiments I can now say that this recipe pays homage to my own mother’s recipe.

What I love most about this recipe is its simplicity, this pumpkin bread is easy to make and is guaranteed to fill your home with a cozy atmosphere and aroma of cinnamon, nutmeg and cloves.

2 3/4 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp ground cinnamon tsp
ground nutmeg
1/2 tsp ground ginger
1/4 tsp ground cloves
1 cup sourdough discard (unfed)
1 cup granulated sugar
1 cup brown sugar, packed
1 cup vegetable oil (or melted butter)
4 large eggs
1 3/4 cups pumpkin puree (not pumpkin pie filling)
1 tsp vanilla extract

1 cup chopped nuts (e.g., pecans or walnuts)
1 cup chocolate chips or dried cranberries

Preheat the oven to 350°F (175°C). Grease and flour two 8x4-inch loaf pans. You can also line them with parchment paper.

In a bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Set the bowl aside.

Then, in another bowl, add the sourdough discard, granulated sugar, brown sugar, and vegetable oil. Whisk until smooth. Next, add the eggs one at a time, beating well after each addition. Then add the pumpkin puree and vanilla extract.

Gradually add all the dry ingredients to the egg-sourdough discard mixture. Mix well until the batter is just combined. Don’t overmix. If you’re using nuts, chocolate chips, or dried cranberries, carefully add them in now.

Add the dough evenly to the bread pans, so that there is enough dough for both pans.
