| 1 cup sourdough discard (unfed starter) | |
| 1 cup all-purpose flour | |
| 1 tablespoon sugar | |
| 1⁄2 teaspoon baking powder | |
| 1⁄2 teaspoon baking soda | |
| 1⁄4 teaspoon salt | |
| 1 large egg | |
| 3⁄4 cup milk (or more for thinner pancakes) | |
| 2 tablespoons melted butter or oil | |
| 1 teaspoon vanilla extract (optional) |
Directions

Prepare dry ingredients:
Mix the flour, baking powder, baking soda, sugar and salt together. Preferably use a large bowl.

Mix the rest of the ingredients
Use a separate bowl and whisk the sourdough discard, egg, milk, melted butter (or oil), and vanilla extract.

Combine all ingredients
Carefully mix the milk mixture into the flour mixture, until just combined. A few lumps are fine; if overmixing, it can make the pancakes a bit hard. Add extra milk if the batter seems too thick.

Cook pancakes
Heat a lightly oiled frying pan over medium heat. Pour about ¼ cup of batter for each pancake and cook until bubbles form on top and the edges look set, about 2-3 minutes. Turn and fry for another 1-2 minutes until golden brown.
