Love adding granola to your breakfast yogurt? Then you should definitely try my receipt! This sourdough discard granola has become one of my favorite recipes, because it’s extra crunchy and lightly sweet but also the sourdough discard adds a hint of flavor, which makes this granola stand out from the crowd.

This version is naturally sweetened and you can easily customize it. Just mix in your favorite nuts, seeds, and dried fruits to make it your own. Sprinkle over yogurt, enjoy with milk, or just snack straight from the jar (which, let’s be honest, is my favorite way!).

2 cups rolled oats
1/2 cup ourdough discard (unfed)
1/2 cup nuts (almonds, pecans, or walnuts), chopped
1/4 cup seeds (pumpkin, sunflower, or chia)
1/3 cup honey or maple syrup
1/4 cup coconut oil or melted butter
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup dried fruit (raisins, cranberries, or chopped apricots)

Directions

Step 1:
Line a baking sheet with parchment paper. Preheat oven to 325°F (163°C).

First, mix the oats, nuts, seeds, cinnamon, and salt in a bowl. Then, in another bowl, combine the sourdough discard, honey (or maple syrup), coconut oil, and vanilla extract.

Then pour the wet mixture into the dry ingredients and mix thoroughly.

Spread the mixture evenly on the prepared baking sheet.

Bake for 30-35 minutes. Stir the granola halfway through. Bake until the granola is golden brown.
