Sourdough Discard Granola Bars

~40 minutes

super easy

12 bars (depending on cut size)

Granola bars are one of those snacks that always seem to disappear quickly—whether you’re packing lunches, heading out on a hike, or just need something to munch with your afternoon coffee. These homemade bars strike the perfect balance between chewy and crunchy, with a satisfying mix of oats, nuts, dried fruit, and chocolate chips if you like.

What makes this version extra special is the subtle tang and richness that comes from using a bit of sourdough discard in the mix. It brings a depth of flavor that sets these apart from your average store-bought bar. Plus, they’re endlessly adaptable: switch up the nut butter, toss in some seeds or coconut, or leave out the chocolate chips if you’re keeping things simple. Best of all, they come together quickly and store well, making them a great make-ahead option for busy weeks or on-the-go days.
