Sourdough Discard Garlic Knots

Here’s a treat for garlic lovers! This soft dough is infused with plenty of olive oil, garlic, and herbs. These sourdough discard garlic knots come together much faster than a full sourdough loaf—especially with a pinch of yeast to speed things up.

Enjoy them on their own, or serve them alongside a bowl of soup, for example.

Ingredients:

1 cup sourdough discard (unfed, room temp)
1/4 cup warm water
1 tsp sugar
2 tsp instant yeast (optional but recommended for quicker rise)
2 cups all-purpose flour
1 tsp salt
2 tbsp olive oil
For the garlic butter:
3 tbsp unsalted butter
3 cloves garlic, minced
1 tbsp chopped parsley (fresh or dried)
Optional: grated Parmesan for topping

Step 1: Make the dough
First, mix the warm water, sugar and yeast (if using) in a bowl. Let the dough rise for 5 minutes. The dough should be bubbly after rise. Then add the sourdough discard, flour, salt and olive oil. Mix the dough until the dough has a soft consistency. Knead the dough for 7-8 minutes by hand or 5 minutes in a stand mixer. The mixture should be smooth after kneading. Place the dough in a lightly greased bowl, cover the bowl with a cloth and let rise until doubled in size, about 1-2 hours (longer if you don’t use yeast).

Step 2: Shape the Knots
Line a baking tray with baking paper. Knead the dough until smooth and divide into 12 equal pieces. Roll each piece into a rope about 20 cm long and tie the rope into a loose knot. Place the knots on the baking paper and cover with a towel. Let rise again for 20-30 minutes.

Step 3: Bake
Preheat oven to 375°F. Bake for 18-22 minutes or until golden brown.

Step 4: Garlic Butter
While the knots are baking in the oven, make the garlic butter. Melt the butter in a small pan. Then add the chopped garlic and sauté for a minute. Finally, stir in the parsley. Brush the knots generously with the garlic butter as soon as you take them out of the oven. Sprinkle with Parmesan cheese if desired.
