Sourdough Discard Crumpets
Crumpets are a typical British delicacy, a cross between an English muffin and a pancake. Crumpets are usually the main dish at afternoon tea, and are usually served warm with plenty of butter or jam. The round shape is created when they are fried in a pan over low heat using an egg or muffin tin. Crumpets are characterized by a spongy-looking surface.
These sourdough discard crumpets are easy to make, as long as you can wait for the dough to rise. Crumpets are suitable for breakfast, brunch, afternoon tea or why not even an evening snack.

| 1 cup sourdough starter discard (unfed) | |

| 1/4 teaspoon salt | |
| 1 tablespoon sugar | |
| 2 ¾ cups warm water | |
| 3 cups all-purpose flour | |
| 2 tablespoons milk | |
| Butter or oil for greasing the tins and pan |

First, mix the sourdough discard and sugar (if you are making sweet crumpets) in 1 cup of warm water. Then mix flour, baking powder and salt in a separate bowl. Add sourdough discard, rest of the water and milk and mix well with the wooden spoon until the dough is smooth, thick and foamy. Cover with plastic wrap and let stand in a room temperature for about 60 minutes or until bubbly.

Bake the crumpets in a non-stick pan or cast iron pan. Preheat the stove to medium heat. Grease the round egg or muffin tins and place them in the greased pan.

Spoon 2-3 tablespoons of batter into each tin. Cook the crumpets for about 5 minutes, until the top looks mostly set and the bottom is golden brown.

Carefully lift the tins off the crumpets. You can use tongs if the tins are hot. Fry the crumpet for another 1-2 minutes until the other side is also golden brown.

Make the next batch. Grease the tins and pan if necessary and repeat until you have used all the batter. This recipe makes about 8 crumpets.
