Sourdough Discard Crepes
These french sourdough discard crepes are easy to make with this simple recipe. Filled crepes, either savory or sweet, are perfect for a breakfast, snack or dessert. Jam, Nutella, banana, whipped cream or fresh berries are great fillings for sweet crepes, while ham and cheese, for example, work great for savory crepes.

| 1cup sourdough starter discard (unfed) | |

| 1 tablespoon sugar (for sweet crepes) | |

Directions

Step 1
First, melt the butter in the microwave or in a pan. Then whisk the sourdough discard, milk, eggs, butter, sugar and salt together in a bowl until smooth. Gradually add the flour, stirring constantly. This will prevent lumps from forming. The dough should be thin and smooth. Let the dough rest for about 30 minutes at room temperature.

For crepes it is best you use a non-stick steel pan or crepe pan. Heat over medium heat and lightly grease the pan with butter or oil.

Pour about 1/4 cup of batter into the pan, tilting it quickly to spread the batter evenly across the pan. Cook the crepe for 1-2 minutes, until the edges start to rise and the bottom is golden brown. Flip the crepe and cook for another 30 seconds on the other side.

Make the remaining crepes, adding butter or oil between each crepe if necessary.
