Craving delicious crackers? And you also have an extra sourdough discard starter that would go to waste? Besides the fact that these crackers are so yummy, sourdough discard crackers are an easy way to use up that extra starter while avoiding waste. 

With just a few simple ingredients, these crispy crackers are perfect for snacking on their own or paired with your favorite cheeses, meats or jams.

Ingredients:

1 cup sourdough discard (100g)
1 cup all-purpose flour (120g)
14 cup olive oil (60ml)
1 tbsp honey or maple syrup (optional, for a touch of sweetness)
12 tsp dried herbs (rosemary, thyme, or oregano, optional)
Flaky sea salt

Preheat the Oven:
Preheat the oven to 350°F (175°C)

Mix Your Discard with Other Ingredients
Combine the sourdough with flour, olive oil, honey, dried herbs and salt. Mix until a dough forms. It should be a little sticky, but workable. If the dough is too sticky, add a little flour.

Roll Out Dough Thin to Get Crispy Crackers:
Next, place the dough between two parchment paper and roll it out very thin (about 1/8 inch). The thinner the dough, the crispier the crackers will be.

Cut and Season:
Take off the upper baking paper and cut the dough into squares or rectangles, for example with a pizza cutter or a knife. Transfer the entire plate to a baking tray. Sprinkle with sea salt.

Bake the Crackers:
Bake the crackers for 20-25 minutes, or until the crackers are golden brown and crisp. Turn the baking tray halfway through baking so that the cookies cook evenly.
