This sourdough discard coffee cake is the perfect way to use up leftover starter and create a crumbly coffee cake that’s perfect for an afternoon coffee breaks. This coffee cake is topped with a buttery, cinnamon-sugar crumble to give it a nice crunchy finish. Our recipe is easy to follow and doesn’t require a fully active starter.

1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup sourdough discard
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup whole milk or butter milk
For the Streusel Topping:
1/2 cup light brown sugar, packed
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 cup unsalted butter, cold and cubed
1/2 cup chopped nuts (optional, e.g., pecans or walnuts)

Directions

Preheat the oven to 175°C (350°F). Grease and flour a baking pan or line it with parchment paper to help remove the cake when it is ready.

First, prepare the streusel topping. In a bowl, mix the brown sugar, flour and cinnamon. Add the cubed cold butter and mix with a fork or your fingers until crumbly. Stir in the nuts. Set aside.

Next, make the cake batter. In another bowl, beat the butter and sugar until light and fluffy. Then beat in the eggs one at a time. Then add the vanilla extract and sourdough discard and mix until smooth. In another bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Note: Start and end with the dry ingredients. Do not overmix.

Assemble the coffee cake. Pour the batter into the baking pan and spread evenly. Sprinkle the streusel topping you prepared evenly over the batter.
