The combination of sharp cheddar cheese, a pinch of salt, and a crispy crust makes these crackers nearly as good as store-brought ones or maybe even better.

1 cup all-purpose flour
1/2cup sourdough discard (unfed)
2 tablespoons unsalted butter, cold and cubed
1 1/4 cups sharp cheddar cheese, grated
1/2teaspoon salt
1/4 teaspoon garlic powder (optional, for extra flavor)
1/4 teaspoon smoked paprika (optional, for color and flavor)
1-2 tablespoons ice-cold water, if needed
Coarse salt for sprinkling (optional)

In my opinion, cheez Its dough is easiest to make in a food processor. Simply mix together the flour, salt, garlic powder, and smoked paprika, then add the grated cheese and cold butter. Mix until the mixture resembles coarse crumbs.

Then add the sourdough discard to the flour mixture and mix until a dough forms. If the dough seems too dry, you can add 1 tablespoon of cold water at a time until the dough has the right consistency.

Then, shape the dough into a disk, wrap it in plastic wrap, and let it rest for at least 30 minutes.

Meanwhile, preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. After the dough has rested for half an hour, roll out the dough on a lightly floured surface to about 1/8 inch thick.

Cut the dough into 1-inch squares. This is best done with a rolling pin or sharp knife. Poke a small hole in the center of each square with a toothpick. This gives the crackers a characteristic Cheez-Its look.
