Sourdough Discard Cheese Crackers

Tasty, homemade cheese crackers are perfect for a cheese platter or just to nibble on. I think homemade crackers are always better and more personal than store-bought ones, and these homemade crackers also have the flavor of sourdough discard.

I’ve made savory crackers a few times, and these cheese crackers were surprisingly easy and quick to make. These sourdough discard cheese crackers are wonderfully cheesy, crunchy and full of tartness thanks to the sourdough discard.

1 cup sourdough discard (unfed)
1 cup shredded sharp cheddar cheese
3 tbsp unsalted butter, softened
1/2 cup all-purpose flour
1/2 tsp salt (plus extra for topping)
1/2 tsp garlic powder (optional)
1/4tsp smoked paprika (optional)

Step 1
In a bowl, mix the sourdough discard, grated cheese, butter, flour, salt and spices of your choice. It is important to knead the dough thoroughly until it becomes smooth.

Then shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes. This will make it easier to roll out the dough thinner in the next step.

First, preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Now you can roll out the chilled dough on a lightly floured surface to about ⅛ inch thick. Cut out small squares of dough, about 1 inch in size. You can use a pizza cutter or knife for this. And then, for example, use a fork to make small dots/holes on the top of each cracker.

Place the crackers on a baking sheet, leaving a little space between them. Sprinkle lightly with salt if desired. Bake for about 18-22 minutes. Keep an eye on the oven during the final minutes to ensure the cookies don't burn. The cookies should be golden brown and crispy on the surface. Let the crackers cool completely on a wire rack. Cheese crackers are best stored in an airtight container.
