Sourdough Discard Buns

You know those days when you open the fridge and think you want something good, but the fridge is empty. That’s when I usually start baking buns! :D. They’re easy and quick to bake and there’s nothing better than fresh-baked buns with butter and two slices of cheese.

These buns are soft and, I have to admit, a slightly addictive. They’re perfect as a snack and a sandwich bun. They also go well with soup or you can put together a perfect burger.

The buns are ready in a couple of hours, and if you’re anything like me, you’ll definitely try to eat one straight from the oven before they even cool down.

I naturally also use sourdough discard in these buns.

1 cup sourdough discard (unfed, room temperature)
3 cups all-purpose flour
2 tbsp sugar
1 tsp salt
2 1/4 tsp instant or active dry yeast
1/2 cup warm milk (or water)
2 tbsp melted butter (plus more for brushing)
1egg (for richer dough and egg wash)
Optional toppings: sesame seeds, poppy seeds, flaky salt

Step 1:
Start making the buns by activating the yeast (if you are using active dry). First, mix the warm milk and sugar together in a bowl. Then add the yeast and let the mixture sit for 5-10 minutes. Skip this step if you are using instant yeast – just mix it with the dry ingredients.

Next, it's time to make the dough. In a large bowl or stand mixer, mix together: sourdough starter, flour, salt, melted butter, egg (if using) and yeast mixture (or milk if using instant yeast). Mix together; the dough may be a little rough. Knead the dough for another 8-10 minutes until smooth and elastic. Add a little more flour if the dough still feels too sticky.

Step 3:
Next is the first rise. Cover the bowl with a cloth or plastic wrap and let rise in a warm place for 1.5-2 hours or until the dough has doubled in size.

Once the dough has risen, you can start shaping the buns. First, cut the dough into 8-10 equal pieces. Shape each piece into smooth balls and place them on a baking sheet lined with parchment paper. Cover the buns and let them rise for another 30-45 minutes.

Preheat oven to 375°F. Brush buns with milk or egg. Add desired toppings, such as sesame seeds, poppy seeds or flaky salt. Bake in oven for 20-22 minutes. Let the buns cool slightly, then brush with melted butter.
