Sourdough Discard Bread
Homemade bread always tastes a little better than supermarket bought bread. No matter if you are an experienced baker or just starting out, with this recipe, you can bake a golden-crusted, soft crumbed bread that’s perfect for lunch sandwiches or just to be enjoyed with butter.
Using simple ingredients you probably already have on hand – flour, water, salt and yeast – this bread is very easy to bake. This recipe is designed to use up the sourdough discard, so you don’t have to throw it away. We’ll give you clear steps to guide you from creating the well-developed dough to a stunning rise.

| 1 cup sourdough discard (unfed starter, around 240g) | |
| 3 cup all-purpose flour (360g) | |
| 1 1/2 tsp salt | |
| 1 cup warm water (about 100°F/38°C) | |
| 1 tsp sugar or honey | |
| 1 1/2 tsp instant or active dry yeast | |
| 1-2 tbsp olive oil (for greasing) |

Dissolve the sugar in a small bowl with warm water. Sprinkle the yeast on the surface, mix and leave for 5-10 minutes until it foams.

In a large bowl, combine the sourdough, flour and salt. Pour in the active yeast mixture and mix until the dough is smooth. It should be slightly sticky.

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. If you have a stand mixer with a dough hook, knead the dough on medium speed for about 5-6 minutes.

Put the dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap and let it rise in a warm place for about 1 hour or until it doubles in size.

Punch the dough down to release the air. Shape into a loaf and place in a greased loaf pan (8 x 4 inches or similar). Cover and let rise again for 30-40 minutes or until puffed and near the top of the pan.

While the dough rises, preheat the oven to 375°F (190°C).

Place the bread in the preheated oven and bake for 35-40 minutes or until the surface is golden brown and the bread makes a hollow sound when tapped. You can also check the instant-read thermometer; the internal temperature should be around 200°F (93°C).
