1 cup all-purpose flour
1 tablespoon sugar (optional, for a hint of sweetness)
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup cold butter, cubed
1 cup sourdough discard (unfed, straight from the fridge is fine)
1/4 cup milk (or more as needed, any type works)

Whisk the flour, sugar, baking powder, salt and baking soda in a large bowl.

Add refrigerator-cold, cubed butter to the dry ingredients. Cut the butter into the flour mixture, for example with a fork or your fingers, until the mixture resembles a coarse crumb mixture with pea-sized pieces of butter.

Pour in the sourdough discard and 1/4 cup milk. Mix gently until the dough starts to come together. If the dough still feels too dry, add milk a tablespoon at a time until the dough is slightly sticky but workable.

Turn the dough out onto a lightly floured surface and pat it into a sheet about 1 inch thick. Cut circles from the dough with a cookie cutter or, for example, a glass and place them on baking paper on a baking sheet. Tap any scraps again to get more cookies.
