Sourdough Discard Banana Pancake
Today we’re whipping up sourdough discard banana pancakes! This is a simple and delicious way to put your sourdough discard to good use. If you feed your starter regularly, you probably know how quickly the discard piles up. Finding creative ways to bake with it makes the process so much more fun!
These pancakes are one of my favorite discard recipes. They’re quick to mix, call for about a cup (240 g) of discard, and help cut down on food wast, so no guilt about tossing extra starter.
The result? Light, fluffy pancakes with the cozy flavor of banana bread. Pile them high with fresh banana slices, a sprinkle of pecans, and a drizzle of maple syrup for the ultimate breakfast treat.

Directions

Place the ripe banana into a medium-sized mixing bowl. Using a fork or a potato masher, mash it thoroughly. The smoother the banana, the more evenly it will blend into your batter and add natural sweetness and moisture.

To the mashed banana, add the egg, sugar, milk, vanilla extract, and sourdough discard. Whisk everything together until the mixture is well combined and slightly frothy.

In a separate bowl, sift or whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Gently pour the dry mixture into the bowl of wet ingredients. Using a spatula or wooden spoon, fold the two together until just combined. Be careful not to overmix—overworking the batter can make the pancakes tough.

Place a non-stick skillet or griddle over medium heat. Lightly coat the surface with a small amount of butter or oil. The pan should be hot enough that a drop of water sizzles when it touches the surface.

Scoop about ¼ cup of batter for each pancake and gently pour it onto the skillet. Let the pancakes cook until you see bubbles forming on the surface and the edges start to look set and slightly dry, which usually takes about 2 minutes.
