Sourdough Discard Banana Muffins
Banana muffins are an easy baked good that can be made with overripe bananas that would otherwise go into the compost bin. With just a handful of pantry staples and a few ripe bananas, you can bake delicious muffins that get their natural sweetness from bananas. We recommend using overripe bananas for a rich, caramelized flavor and to make the muffins even sweeter.
Banana muffins are also customizable. Love chocolate? Sprinkle in chocolate chips. Prefer a nutty crunch? Add walnuts or pecans. You can also use whole wheat flour instead of regular flour or replace the sugar with honey or maple syrup to make them healthier.
This receipt is beginner-friendly, just mash the bananas, mix the ingredients together, and pop the batter into the oven.

Preheat the oven to 375°F (190°C) Grease the muffin cups or line with paper liners, so that the muffins don't stick to the pan.

Mash the bananas in a bowl, for example with a fork. Add the sourdough discard, sugar, oil, egg and vanilla extract. Mix until the mixture is smooth. Tip: If your bananas are not ripe enough, you can roast them (do not peel them) at 350°F (175°C) for 10-15 minutes until they are soft and blackened.

In a separate bowl, mix the flour, baking soda, baking powder, salt, and cinnamon.
